French-style Sponge Cake

This traditional cake is a favorite for kids and adults alike! It has simple, but delicious flavors and does not require many ingredients. The cake is already amazing plain, but can also be iced with jam, nutella or even chocolate mousse.

1 cup, granulated sugar
0.4 cup, potato starch (easy to find at Whole foods)
4 eggs
1/3 cup, Francine flour

1. Start your oven and put the temperature to 350F
2. Separate the egg yolks and the whites
3. Whisk the egg yolks with the sugar until the mixture becomes whiter and fluffy (you can use an electric mixer to make it easier)
4. In another bowl, beat the egg whites until they become stiff. To check stiffness, try flipping the bowl upside down. If the egg whites stick to the bowl, you're good to go!
5. Add the flour, potato starch, and egg whites to the mixture and mix slowly until it is homogeneous
6. Butter the inside of a round or bundt-style pan and dust the inside with granulated sugar. Remove any excess sugar.
7. Bake your cake for ~30min and voila!

Once the cake is ready, you can choose to ice it, or even fill it with jam or chocolate sauce.
