Eggplant caviar is one of the most traditional French hors d'oeuvres - in fact, it is the only vegetarian dish, which can take the name "caviar" in France! Because of the long-standing history of this recipe, the name "caviar" was granted by law - when it is otherwise reserved to mean sturgeon eggs.
