If you are a meat-lover, these duck rillettes will make an ideal appetizer. This spread is flavorful, without being overwhelming, and perfectly textured. Serve Rougié duck rillettes as appetizers on a small piece of toast. You can also use mix rillettes with cherry tomatoes to create a fresh and tasty hors d’oeuvres. To discover the full flavor of duck rillettes, serve at room temperature, but once opened, place the jar in the fridge.

The word “rillette”, which comes from “rille”, means cooking and preserving meat in lard. While this tradition has existed since the Roman period, it only became part of France’s classic foods in the 19th century. Traditionally, rillettes were packaged in stoneware, but glass packaging now allows them to be preserved “sous-vide” and keep their flavor intact while allowing for a longer shelf life. We chose these rillettes from Rougié for their tradition as one of France’s oldest foie gras, rillettes and terrines producers. Rougié is also one of the few companies to have made ethical farming a priority. Due to FDA regulations, these duck rillettes are produced in Canada following the same traditional method used in Périgord, France.
