Bearnaise Sauce

Béarnaise sauce is a distant cousin to Hollandaise sauce, made primarily with canola oil, wine vinegar, egg yolks, tarragon, shallots and lemon juice. It complements a variety of dishes such as chicken, steak, roasted fish, vegetables or oven baked potatoes. This sauce is best used cold, like a mayonnaise or crème fraiche.
