Perigord Pork & Duck Terrine

If you are a meat-lover, this pork and duck terrine will make an ideal appetizer. This spread is flavorful, without being overwhelming, and perfectly textured. Serve Rougié terrine as appetizers on a small piece of toast. To discover the full flavor of this tasty spread, serve at room temperature, but once opened, place the jar in the fridge.

The word “terrine” refers to a meat, fish or vegetable preparation, blended with eggs, seasoned and cooked. This dish takes its name from the container in which it used to cook; “terrine” means terra cotta dish. Because terrine contains eggs, it has a creamier texture, and isn’t as chunky as rillettes.

We chose this pork and duck terrine from Rougié for their tradition as one of France’s oldest foie gras, rillettes and terrines producers. Rougié is also one of the few companies to have made ethical farming a priority. Due to FDA regulations, these duck rillettes are produced in Canada following the same traditional method used in Périgord, France.
