Provence herbs are great to infuse any dish with the flavors of the sunny South of France. They can be used to season all kinds of meats (beef, chicken, pork, etc.) and fish. They are also delightful on roasted vegetables, such as ratatouille or in homemade sauces. To season a dish, sprinkle some Provence herbs when the dish is about half-way cooked.
Aux Anysetiers du Roy, the brand behind these Provence herbs has a long-standing history of tradition. Aux Anysetiers du Roy was originally a restaurant in the Left Bank of Paris, specialized in French cuisine from Provence. It was one of the first Parisian restaurants to serve steaks with Provence herbs in the 1960s. At the end of the meal, each patron would receive a small jar of Provence herbs as a gift. It was an overnight success and guests would often come back to ask if they could purchase more herbs! To satisfy demand, the restaurant developed a small “epicerie” line with Provence Herbs, olive oils, and olives from the south of France. Each ceramic jar is still produced in a small village in the South of France near Lyon. They are filled up by hand with the mix of Provence herbs and are reusable indefinitely.
